Carrot Ginger Soup with Mollye

Learn how to make carrot ginger soup with Mollye. Happy cooking!
Recipe:
Ingredients
  • About 6-7 large carrots, cut thinly
  • 1 onion, sliced
  • 1-2 Tablespoons minced ginger
  • 2 cups broth
  • 2 cups waters
  • 1-2 tablespoons olive oil
  • A few slices of orange peel
  • Chives for topping 

Directions
  1. Put olive oil in a large pot, and add carrots and onion. Sautée for about 10 minutes.
  2. Add the broth, water, orange peel and ginger
  3. Simmer until veggies are soft
  4. Add ingredients to a blender about ¾ full and blend until smooth. Make sure to hold the lid on tight! Repeat until finished.
  5. Top with whatever you’d like and enjoy :)
